What Is Salt Percentage?

Salt percentage expresses how much salt a recipe contains relative to a base ingredient – flour in bread, water in a brine, or vegetables in a ferment. Working in percentages instead of fixed amounts lets you scale any recipe up or down and keep the seasoning identical, which is why serious bakers and fermenters think in percent.

Baker’s Percentage Explained

In baker’s percentage, flour is always 100% and every other ingredient is expressed as a percentage of the flour weight – including salt. So “2% salt” on 1000 g of flour means 20 g of salt, regardless of how much water or yeast is in the dough. It is the universal language of bread formulas.

Most bread sits at 1.8–2.2% salt (baker’s, of flour). Below ~1.5% bread tastes flat and ferments faster; above ~2.5% it tightens the dough, slows yeast, and tastes salty. 2% is the classic all-purpose target.

Salt Percentage for Brines

Brines are measured as salt relative to water weight, and run much higher – roughly 3–10%. A quick wet brine for poultry is often 5–8%; a light cure or pickling brine sits lower. Higher salt brines work faster but can over-salt if left too long.
