How Long to Cook Fish

The reliable rule of thumb is about 10 minutes of cooking per inch of thickness, measured at the thickest part. Thickness matters far more than weight or the type of fish – a thin tilapia fillet and a thick halifish steak of the same weight cook in very different times.

Baked Fish Guide

Baking is the most forgiving method. Heat the oven to 400–425°F, place fillets on a lined or oiled sheet, brush with oil and season, and bake about 10–12 minutes per inch. No flipping needed.

Grilled Fish Guide

Oil the grates well and start skin-side down over medium-high heat. Grill roughly 8–10 minutes per inch, flipping once halfway. Firm fish (salmon, tuna, swordfish) holds up best; delicate fillets benefit from a basket or foil.

Pan-Seared Fish Guide

Heat oil in a skillet over medium-high until shimmering. Sear skin-side first, pressing gently for even contact, about 3–4 minutes per side for a 1-inch fillet. This gives the crispest crust.

Air Fryer Fish Guide

Preheat to 400°F, arrange fillets in a single layer, and cook 8–10 minutes per inch, flipping once if over an inch thick. Great for breaded fish with little oil.

Frozen Fish Adjustment

You can cook fish straight from frozen – just add about 50% more time and hold off on seasoning until the surface thaws. Baking and air frying handle frozen fillets best. Signs Fish Is Done
