What Is Recipe Yield?

Recipe yield is how much a recipe produces – and, more usefully, how many servings that amount feeds. This calculator answers the one question the other recipe tools do not: how many servings will this make? Give it a batch size and a portion size and it returns the serving count, with a waste allowance for real-world losses.

Servings vs Yield

People use the words interchangeably, but they are different. Yield is the total output – 5 kg of stew, 60 cookies, 4 litres of soup. Servings is that yield divided into portions – 5 kg of stew at 250 g a head is 20 servings. Yield is what you make; servings is who you feed. Get the portion size right and the two line up.

Portion Control Guide

Portion size is the lever that decides your serving count. Halve the portion and you double the servings from the same batch. Typical portions vary by course and setting – a plated dinner main runs larger than a buffet main, which runs larger than a tasting portion. Catering Yield Guide

Caterers plan from headcount backwards: portions per guest × guests = total batch, with spare capacity on top. Plated service needs less spare (3–5%) than a buffet where guests serve themselves (8–12%). Set the waste allowance in the calculator to fold that spare into the batch automatically.

Meal Prep Yield Guide

Meal prep is yield planning for the week: decide a meal weight (a hearty container is ~350–400 g), then size the batch to your number of meals. Cooking 2.8 kg of a one-pot meal at 350 g a container yields 8 meals. Keep a small waste margin for the sauce that clings to the pot.

Food Cost Planning

Yield drives cost per serving, the number that actually matters for pricing. If a 5 kg batch costs $40 in ingredients and yields 20 servings, that is $2.00 a serving. Cut the portion to 200 g and you get 25 servings at $1.60 each – the same batch, a different price point. Plan yield and portion together when you cost a dish.

Waste Factor Discussion

Raw yield rarely survives to the plate intact. Trimming, cooking shrinkage, moisture loss, pan residue and spillage all reduce usable output – often 5–20% depending on the food. A waste allowance lowers the servings a batch will realistically deliver (or raises the batch you need to hit a target), so you do not run short at service.

Decide the portion before the batch – it is the variable that sets your serving count. Add a waste allowance for cooked dishes (shrinkage and moisture loss are real). Round servings down for planning so you never come up short, and keep a small buffer for second helpings.

What is the difference between yield and servings?

Yield is the total amount produced; servings is that amount split into portions. Yield ÷ portion size = servings.

How much should a portion be?

Why does my real yield come out lower?
