Why recipes use different temperature scales
Fahrenheit is standard in the United States, Celsius across most of the rest of the world, and gas marks appear on many UK and European gas ovens as a numbered dial rather than a temperature. The same oven heat can be written three ways, so a recipe in one system often looks unfamiliar in another – which is exactly what this converter is for.
Convection (fan) oven adjustment
Fan ovens circulate hot air and cook faster. Lower the temperature by about 20°C (25°F) from a conventional recipe, or keep the temperature and shorten the time by roughly 10–15%. Many ovens show the fan setting separately, so a recipe’s 180°C becomes about 160°C fan.
Air fryer adjustment
An air fryer is a compact, fast convection oven. Drop the temperature by about 25°F (15°C) from a conventional recipe and start checking 20% sooner, since the small chamber heats food quickly. Shake or turn items halfway for even browning.
High-altitude baking
Above roughly 3,000 ft (900 m), liquids boil at a lower temperature and leavening expands faster. Many bakers raise the oven temperature by 15–25°F to set the structure sooner, and reduce leavening and sugar slightly. Treat these as starting points and adjust by results.
