Extraction yield is how much of the coffee dissolved into the cup. This chart maps the percentage to how the coffee tastes.

Extraction yield How it tastes
Under 18% Sour, salty, underdeveloped
18 to 20% Bright, sweet, lively
20 to 22% Rounded, balanced, full
Over 22% Bitter, harsh, drying
Yield plus strength. Extraction yield is only half the picture. Pair it with TDS (strength) to know whether to change the grind, the ratio, or both.
