What Is Proofing?

Proofing (or proving) is the rest during which yeast or starter ferments the dough, producing gas that makes it rise. It is the step bakers find hardest to time, because dough follows temperature, not the clock. The calculator above estimates how long your dough needs based on temperature, yeast, and style – the “how long,” not just the “how much.”

Warmer = faster. Fermentation roughly doubles for every ~10°F (5–6°C) rise, and halves for every 10°F drop. That is why the same dough takes 1 hour in summer and 3 in a cold kitchen.

Bulk Fermentation vs Final Proof

Bulk fermentation (the first rise) happens after mixing, before shaping – the dough roughly doubles and develops flavour and structure. Final proof (the second rise) happens after shaping, just before baking, and is usually shorter – about half to two-thirds of the bulk time. Under-proof either and the loaf is dense; over-proof and it collapses.

Most bread proofs best at 75–80°F (24–27°C). Above about 90°F the yeast works fast but flavour suffers and over-proofing risk climbs.

Sourdough Proofing Guide

Sourdough runs on wild yeast and is much slower and more temperature-sensitive. A typical room-temperature bulk runs 4–8 hours at 70–75°F, often followed by a cold retard:

A young or sluggish starter can double these times; a vigorous one shortens them. Always proof to signs, not the clock.

Under-Proofed vs Over-Proofed

Under-proofed dough is dense, springs open at the seams, and bakes tight and gummy. Over-proofed dough is slack and bubbly, deflates when handled, and bakes flat with a coarse crumb. The window between is where great bread lives.

Visual Proofing Cues

  • Dough has roughly doubled in size (bulk) or grown 50–75% (final).
  • Surface looks puffy and slightly domed, not slack or sunken.
  • Bubbles visible at the edges of the container.
  • Feels airy and pillowy, not dense.

The Finger-Poke Test

Lightly flour a fingertip and press about 1 cm into the dough. Springs back fully and fast: under-proofed, give it more time. Springs back slowly, leaving a slight dent: ready to bake. Does not spring back, dent stays: over-proofed – bake now or reshape.

Cold Proofing (Retarding)

Refrigerating dough slows fermentation dramatically (the fridge sits around 38°F/3°C), buying 12–48 hours of flexibility and deeper flavour. Cold-proof after a partial bulk, shape cold or after a short warm-up, and add time to the final proof since cold dough bakes sluggishly. Pizza and sourdough especially benefit.

Humidity & Proofing Box Tips

  • Dry air skins the dough – cover with a damp cloth, lid, or oiled wrap.
  • Aim for 70–80% humidity in a proofing setup for a supple surface.
  • DIY proof box: oven with the light on, or oven with a tray of just-boiled water.
  • A consistent warm spot beats chasing a moving room temperature.

Proofing Troubleshooting

  • Dough not rising: too cold, dead yeast, or too much salt on the yeast – warm the spot and check yeast freshness.
  • Rising too fast / collapsing: too warm or too much yeast – cool it down or shorten the proof.
  • Skin forming: cover it; raise humidity.
  • Sourdough stalls: starter is under-fed or weak – feed and wait for an active starter.
