What Is Batch Scaling?

Batch scaling is the process of multiplying a recipe up to production volume – turning a 12-serving home recipe into a 300-serving catering run, a tray of cookies into a full bakery shift, or a single sauce base into a week of meal prep. Unlike simply doubling a recipe, batch scaling deals with the realities of large-volume cooking: ingredient rounding, waste and overage, equipment limits, seasoning that does not scale linearly, and cost per portion.

The core math is a single scaling factor applied to every ingredient:

scaling factor = target yield ÷ original yield

If a recipe makes 12 portions and you need 300, the factor is 300 ÷ 12 = 25×. Every weight, volume and count in the recipe is multiplied by 25. The calculator above does this instantly, and the panel below also scales a full ingredient list, adds a waste allowance, and estimates batch cost.

In a commercial kitchen, the scaling factor is only the starting point. Production cooking introduces constraints a home recipe never faces:

Bakery Production Guide

Bakeries scale by dough weight and unit count. Because baking is a ratio craft, scaling a formula is reliable – but a few ingredients need attention:

Recipe scaling

A chili recipe yields 8 bowls and uses 900 g beef, 2 onions, 3 tbsp chili powder. Scaling to 200 bowls gives a 25× factor: 22.5 kg beef, 50 onions, and chili powder scaled to taste (linear 75 tbsp, season toward ~60 tbsp and adjust).

Serving calculation

You have 14 kg of cooked pulled pork and plan 160 g sandwiches. Servings = 14000 ÷ 160 = 87 sandwiches – useful for confirming a batch covers the guest count before service.

Seasoning & Spice Scaling

Season conservatively. Salt, pepper, chili, garlic and strong herbs should be scaled to about 70–90% of the linear amount, then adjusted to taste. Flavours concentrate and compound in large volumes, and over-salting a 25× batch is an expensive mistake to fix.

Baking ingredient scaling notes

Flour, sugar, water, butter and eggs scale linearly. Yeast and chemical leaveners scale linearly by amount but behave differently at volume: large doughs self-heat and ferment faster, and leaveners must be distributed evenly. Vanilla, spices and zest follow the seasoning rule – scale to about 85% and taste.

How do I scale a recipe to a specific number of servings?

Does everything scale by the same number?

Most ingredients do. The exceptions are seasoning and spices (scale to 70–90% and taste), yeast in very large doughs, cooking time, and pan/equipment limits.

What is a waste or overage allowance?

A small percentage (typically 3–10%) added on top of the scaled amounts to cover trim, spillage and second helpings, so a production run does not fall short.
