How loaf pan volume works

A loaf pan’s capacity is simply length × width × height. Divide the cubic inches by 14.44 to get US cups, and fill to about two-thirds so the loaf has room to rise without spilling. The calculator above gives the full volume and a safe batter amount for any pan you measure.

The two everyday standards are 9×5 (large, ~1.5 lb) and 8.5×4.5 (medium, ~1 lb). Most recipes assume one of these unless they say otherwise.

What size loaf pan does my recipe need?

Match the batter volume to about two-thirds of the pan. A recipe making roughly 6 cups of batter suits a 9×5; about 4 cups suits an 8.5×4.5. Too much batter overflows; too little gives a short, dry loaf. Use the “does my recipe fit?” box above to check.

No loaf pan? What to use instead

Match by total volume rather than shape. A 9×5 loaf (about 135 cubic inches) is close to:

  • An 8×8 square pan
  • A 9-inch round cake pan
  • Two mini loaf pans
  • A muffin tin (about 12 muffins per 9×5 of batter)

How full should you fill a loaf pan?

Fill to about two-thirds. Yeast breads and quick breads both rise a lot, and an over-full pan spills over the sides and bakes unevenly. If you have extra batter, bake it as muffins rather than overfilling.

Quick breads

Banana bread, zucchini bread and similar rise from baking soda or powder. Fill to about two-thirds; they dome nicely without much spread.

Yeast loaves

Yeast doughs rise more dramatically. Fill a little under two-thirds and let the shaped dough proof to just above the rim before baking.

Baking time and pan size

A deeper pan or a smaller pan filled higher bakes more slowly – the centre takes longer to set. A shallower or larger pan bakes faster. If you change pan size, keep the oven temperature the same and adjust the time, testing the centre with a skewer.

Pan material matters too

Metal pans bake fastest and give the crispest crust; glass and ceramic hold heat and bake a little slower with a softer crust; dark metal browns more, so drop the temperature about 25°F (15°C) to avoid over-browning.
