How Long to Smoke Meat?

Smoking time depends on the cut, its weight, and the smoker temperature – not the clock. Most low-and-slow barbecue runs at 225–250°F and finishes by internal temperature, not by a timer. The calculator above estimates the cook, then – more usefully – works backward from when you want to serve so you know when to light the smoker.

The golden rule of BBQ timing: plan for the long end, because you can hold finished meat wrapped in a cooler for hours – but you can never speed up a stubborn brisket. Start early; rest long.

Smoking Temperature Guide

225°F is the classic low-and-slow temperature for maximum tenderness and smoke; 250°F cooks faster with nearly the same result; 275°F ("hot and fast") can finish a brisket in far less time. Poultry is often smoked hotter (275–325°F) for safer, crispier skin.

Brisket Smoking Guide

A whole packer brisket (12–16 lb) at 225°F takes roughly 1–1.5 hours per pound – often 12–18 hours total – and finishes at 200–205°F internal, when it probes like soft butter. Expect a long stall; wrapping in butcher paper or foil pushes through it. Rest at least 1 hour (a cooler holds it for 2–4).

Pork Butt Smoking Guide

Pork shoulder (butt) at 225°F runs about 1.5–2 hours per pound and pulls apart at 200–205°F. An 8–9 lb butt commonly takes 12–16 hours. It is forgiving and holds beautifully, making it the easiest big cut to time for a crowd.

Ribs Smoking Guide

Ribs go by time and feel, not weight. Baby backs take about 4.5–5.5 hours at 225°F; spare ribs 5–6.5 hours. The popular 3-2-1 method (3 hrs smoke, 2 hrs wrapped, 1 hr sauced) suits spares; use 2-2-1 for baby backs. They are done when the meat pulls back from the bone and probes tender (~195–203°F).

Turkey & Poultry Smoking Guide

Smoke whole turkey at 250°F for about 30 minutes per pound, to a safe 165°F in the breast and thigh. Many smoke poultry hotter (275–325°F) for crispier skin. Do not stuff a smoked bird, and keep it moving through the danger zone (40–140°F) within 4 hours.

The Stall Explained

Partway through a long cook, the internal temperature plateaus – often for hours – around 150–170°F. This is the stall: evaporative cooling from the meat’s surface balances the heat going in, like sweating. It is normal and unpredictable.

Beating the stall (the Texas crutch): wrapping in foil or butcher paper traps moisture and powers through the stall, cutting an hour or more off the cook and softening the bark slightly. Unwrapped ("naked") gives the best bark but a longer, less predictable cook – so leave a bigger time buffer.

Rest Period Recommendations

Resting lets juices redistribute and finishes carryover cooking. Brisket and pork butt rest 1 hour minimum – or hold wrapped in a towel-lined cooler for 2–4 hours, which also buys timing flexibility. Ribs rest 10–15 minutes; poultry 20–30; prime rib 20–30.
