Extraction yield is how much of the coffee dissolved into the cup. This chart maps the percentage to how the coffee tastes.

18 to 20% Bright, sweet, lively
20 to 22% Rounded, balanced, full
Over 22% Bitter, harsh, drying
Yield plus strength. Extraction yield is only half the picture. Pair it with TDS (strength) to know whether to change the grind, the ratio, or both.

FAQ

What if my extraction yield is fine but the coffee still tastes off? Extraction yield alone doesn’t guarantee good coffee. Water quality, bean freshness, and grind consistency all affect taste even at an ideal yield percentage, so check for stale beans or uneven grind size before adjusting yield further. Most specialty coffee guides treat 18 to 22 percent as the target range, though personal taste and roast level can shift where a particular coffee tastes best within or slightly outside that band.
