Roast level shapes a coffee flavor as much as its origin. This chart describes the look and taste of each level from light to dark.

Roast Appearance Flavor
Light Light brown, dry surface Bright, acidic, origin character
Medium Medium brown, dry Balanced, sweet, rounded
Medium-dark Rich brown, light oil Bold, fuller body, low acidity
Dark Dark brown, oily Smoky, bittersweet, roast-forward
Roast hides origin. Lighter roasts show off where a bean was grown; darker roasts taste more of the roast itself. Caffeine barely changes between them.
