Sugar Conversion Chart

Sugars vary in weight by type, so a cup of one is not a cup of another. This chart gives gram weights for the sugars and liquid sweeteners you bake with most.

Swapping sugars: white and brown sugar trade 1:1 by volume (brown adds moisture and molasses flavor). Replacing sugar with honey means using about 3/4 the amount and reducing other liquid.
