Cup-for-Cup Replacement

A quality 1:1 gluten-free blend is designed to replace wheat flour by equal volume in most recipes – no other changes except resting the batter 10–30 minutes so the starches hydrate. It will not develop the same chew as bread flour, but for cookies, cakes, muffins, and quick breads it is the closest match. Single GF flours are not cup-for-cup and need the adjustments below.

Most all-purpose GF blends combine a starch (rice, tapioca, potato), a protein flour (sorghum, brown rice), and a binder (xanthan or guar gum).
