THE MATH
Convert to a base unit, then to the target:
result = value × (from factor ÷ to factor)
Volume units convert through a base (liters). US cooking units nest neatly: 3 teaspoons to a tablespoon, 16 tablespoons to a cup.
US and UK gallons differ — these use US liquid measure.
US and imperial (UK) fluid units share names but differ in size; this uses US liquid measure.
Dry and liquid measures also differ for some units; cooking conversions here are liquid.
